(4) Pecan pie made from scratch. A perfect cake every time. The best pecan pie recipe that is always perfect! This recipe is made from scratch using the best crust recipe you can find. You can also buy it and go straight to the filling section. Work in a cool environment and do not let the butter soften too much. Would you like to replace half the butter with lard? No problem, that can be to your advantage in terms of texture. Personally, I prefer just butter for better flavor. For the filling, it is best to toast the pecans briefly, 3-5 minutes, but do not do this too much as this can affect their flavor. Use a good natural vanilla, but don't put too much in, otherwise the other subtle flavor will dominate. Don't skimp on the maple syrup, buy the real deal, that's where the flavor is. Whether it's for Thanksgiving or another holiday, no one will ever turn down a good piece of pecan pie.

(5) Roasted Garlic Fluffy Mashed Potatoes. Roasted garlic takes the simple puree to a whole new level. For the perfect heavenly mashed potatoes, you first need to buy the right potatoes. Go for the starchiest you can find. Always puree them while they are piping hot inside. It's also a good idea to warm up your mixing bowl. Never use a blender or any other electrical appliance or you will ruin it. The wooden spoon or a fork are the best options; these will make your puree fluffy and prevent the release of starch that can make the texture sticky. The ricer adds extra fluff and helps eliminate lumps. I used the three heads of garlic because it loses its pungency after roasting, so don't be afraid, but two heads is fine if you want a little less garlic. But for me, three heads are better than two! (6) Perfect roast turkey. Super moist, slow cooked, made with butter cheesecloth without basting. This is a simple turkey recipe and yet it is probably the best turkey you will ever taste. No basting is required. because basting doesn't do much anyway, other than extending the cooking time by opening the oven door every 15 minutes. Once the skin is locked in the juices, there is no point in basting as the juices simply ooze off the skin, like water on the back of a duck, or should I say turkey? However, if you avoid overcooking and drying the breast, your turkey will be moist and incredible. So why do we baste? To keep the breast meat cooler, which helps prevent overcooking. This is also the science behind the cheesecloth: it keeps the brisket cooler, prevents it from overbrowning and works even better thanks to the slow, 'less drying' cooking process. It's best to do your filling separately, see my filling recipes for ideas. And the gravy? It's to die for, I'm not kidding! It is made with vegetables and enriched with a dry sherry. As an option, I followed my French tradition by using chestnuts. You can buy fresh chestnuts, sealed bags or even ready-made cans, so you don't have to worry about this.
