It may shock you, but on an industrial scale, electricity is rarely generated in reserve. If fuel or hydropower is used to generate energy, the process can be regulated and excess electricity is not generated. But there is a problem with renewable energy sources. You cannot say that the sun /"should shine later/" and the wind /"should blow in the evening/". How can we save sustainable energy and give it to consumers during peak hours?
