This is how you get plates off the table and entice customers.
So if I’m a customer, I want the plates to be my damn way. I don’t want to sit among dirty plates that no longer serve any purpose. Some restaurants (and guests) are weird about this. They might want you to wait until everyone else is done before you leave. That way, no one feels rushed. I get it. But it’s still absurd. And there is a way to clear plates without drawing too much attention to the person still eating.
So no, I don't wait. But there are exceptions.
I'm waiting for a 2-top. I want everyone ready.
Definitely if it's a date. Definitely, definitely if it's a first or second date. I wait until BOTH are ready.

NOW ON PREBUSING
THIS is how you move people along. Never rush a table, never. But of course you want them to move along. So if I notice a guest is not really engaged in eating, I go over to them and ask if they are done. /"Are you still working on this?"/" If they hesitate, I don't immediately back off. I wait and MOST OF THE TIME they say: /"Mmm, okay, yeah, I'm done."
I see colleagues letting people finish their plate for three hours. No way.
Of course I'm not going to be negative about it, but I'm not going to participate either.

NOW ABOUT HOW I PREBUS
*The same way I drop plates.
I make sure my elbows don't get in people's faces and I hold the plates tight (this is also to make carrying the plates easier, which is discussed in the next video).
