Here's a quick and delicious recipe for juicy apple pancakes that you can make in just 5 minutes!

Ingredients:
1 large apple (Granny Smith or Honeycrisp work well)
1 cup pancake mix
3/4 cup milk
1 egg
1 tablespoon of sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
Butter or oil for cooking
Maple syrup (optional)
Icing sugar (optional)
Instructions:
Prepare the apple:

Peel the apple, remove the core and then grate it with a box grater.
Mix the batter:

In a medium bowl, combine the pancake mix, milk, egg, sugar, cinnamon, nutmeg and vanilla extract. Mix until smooth.
Fold the grated apple into the batter.
Cook the pancakes:

Heat a non-stick frying pan or griddle over medium heat and add a small amount of butter or oil.
For each pancake, pour about 1/4 cup of batter into the skillet.
Cook until bubbles form on the surface and the edges appear firm, about 2 minutes. Turn and cook for another 1-2 minutes until golden brown.
Serve:

Serve warm with a drizzle of maple syrup and a sprinkle of icing sugar, if desired.
Tips:
For an extra touch, you can add a handful of chopped nuts or raisins to the batter.
If you prefer a thicker batter, reduce the milk to 1/2 cup.
